So, dig deep into that chocolate stash and let's turn those leftovers into something truly extraordinary!


  • 400g H!P Chocolate of your choice
  • 125g Golden Syrup
  • 125g Unsalted Butter of your choice
  • 100g Mini Marshmallows
  • 150g Digestives, chopped
  • 600-800g Easter Chocolates 


  1. Prepare the Tin: Line an 8/9" square tin with parchment paper, ensuring that it overhangs the edges. This will make it easier to lift out the rocky road once it's set. Set aside.

  2. Melt Chocolate Mixture: In a large heatproof bowl, combine the H!P chocolate, golden syrup, and butter. Melt the mixture gently over a double boiler or in the microwave using short bursts, stirring frequently until smooth and fully melted. Be careful not to overheat the mixture.

  3. Add Mix-ins: Once the chocolate mixture is smooth, fold in the mini marshmallows, chopped digestives, and the majority of your Easter chocolates (reserve a handful for topping). Stir until everything is well combined and evenly coated in chocolate goodness.

  4. Pour and Spread: Transfer the mixture into the prepared tin, spreading it out evenly with a spatula or the back of a spoon. Ensure the surface is level and smooth.
